That's interesting, I had no idea it (lamb) was so scarce your side. Here, especially at easter, it's in abundance and usually very well priced too ($5-$6/kilo). Slow roasted shoulder with rosemary, garlic and salt is one of my favourites :yum

I love hash browns too, will have to try that next time :yum It looks (after a bit of googling) like texas hash browns are a little different to the ones I'm used to, do you have a good recipe for hash browns, I need to try it the texas way?

we just boil the potatoes check them with a fork when the fork penetrates deep they are ready ,shred them with a shredder, than we fry them in butter and bacon grease until golden brown. yum yum.making myself hungry. this is probably the way you all do it right.
:yum

Thanks Alpha, I'll be saving some bacon grease for this recipe ??
this is probably the way you all do it right.
I've always done it similar to this recipe (below) but will definitely try it texan style next time I do hash browns ?
Method
  1. Coarsely grate the potatoes and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.
  2. Add the egg, a good couple of pinches of salt and freshly ground black pepper (you need to salt the mixture well otherwise the hash browns can be quite bland). Mix the ingredients well.
  3. Heat a good glug of oil in a heavy based frying pan and when the oil is hot (but not smoking), add spoonfuls of the potato mixture into the pan and flatten into patties about 1cm/½in thick. Flip over once browned and crispy – about 2–3 minutes each side.
  4. Serve hot as a breakfast or supper side dish. Especially good with bacon and eggs.
